Early harvest of Ancient Olive Trees.

We use green olives to ensure liveliness and freshness in extra virgin oil; highlighting herbaceous, spicy and bitter notes, as positive attributes

Immediate grinding.

We empty boxes with olives from the day's harvest. Then the olives go up by the hopper and into the mill, where they are crushed

Short kneading time at controlled temperature.

We obtain a paste which is kneaded for 30 minutes, at 27 Celsius degrees; avoiding oxidation and preserving the most subtle aromas and most expressive polyphenols. This paste then passes through a centrifugal decanter, which separates Extra Virgin oil from the alperujo

Centrifugation.

We transfer the paste to the centrifugal decanter, which separates the Extra Virgin oil from the alperujo
